Ingredients
  

  • 1 ¾ cup granulated white sugar or brown sugar
  • ½ cup golden syrup or honey
  • 1/2 cup water
  • 1 tbsp baking soda

Method
 

  1. Line a 9 inch square pan with parchment paper (sides and bottom). Have a spatula ready.
  2. Place the sugar, golden syrup / honey and water in a large saucepan (this mixture will expand a lot, so use a large pot with enough space).
  3. Bring the mixture to a boil over medium heat until it reaches 300°F. Do not stir, just mix to make sure the sugar has been dissolved.
  4. Brush the sides of the pot with a pastry brush dipped in cold water to dissolve the sugar crystals on the side of the pot. Do NOT stir the sugar syrup.
  5. When the sugar syrup reaches 300°F, remove it from the heat and immediately add the baking soda.
  6. Whisk briefly until the honeycomb mixture has expanded. Add to your 9x9 pan.
  7. Do not touch it or spread it out, just allow the it to harden. It will take a couple of hours.
  8. Once the candy is ready, remove it from the pan and break it up into chunks.
