Preheat oven to 400°.
Cook your rice according to package instructions.
Cook onion in olive oil until clear.
Stir in tomato paste, garlic and ground beef. Drain fat.
Stir in rice to your meat mixture, add diced tomatoes.
Season with oregano, salt, and pepper. Let simmer for about 5 minutes.
Place peppers cut side-up in baking dish and drizzle with oil.
Using a large spoon, add beef mixture into each pepper and top with cheese.
Cover your baking dish with foil and bake for about 30 minutes or until peppers are tender.
Uncover and bake again until cheese melted and toasted.
Optional: Garnish with parsley before serving.
