Ingredients
  

Main items:
  • 15 oz can dark red kidney beans drained and rinsed
  • 15 oz can cannellini beans drained and rinsed
  • 28 oz can diced tomatoes with juices
  • 2 Tbsp tomato paste
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 cup onion diced
  • 2 tbsp minced garlic
  • 4 cups vegetable broth
  • 2 cups water
  • 2 tbsp vegetable base
  • 2 bay leaves
  • 2 tbsp dried Italian seasoning
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 cup spinach optional
Add 30 minutes before serving:
  • 1 cup zucchini diced
  • 1 1/2 cups dried ditalini or other small pasta
  • 1 cup cut green beans fresh, frozen or canned
  • 1 cup spinach optional

Method
 

  1. Add the first 15 ingredients to your slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  2. Add the next 3-4 ingredients about 30 minutes before you want to serve it.
