Ingredients
  

  • 1 lb ground beef or turkey
  • 1 can refried beans
  • 1 can black beans
  • 1 can Mexican diced tomatoes
  • 1 ½ cup sour cream or greek yogurt
  • 1 cup taco sauce
  • 1 envelope taco seasoning
  • gluten free tortillas
  • 3 cups shredded Mexican cheese blend

Method
 

  1. In a large skillet, cook the beef over medium heat, then drain.
  2. Add water and taco seasoning; bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes.
  3. Place two tortillas in a greased 13x9-in. baking dish. Add thin layers in this order, refried beans, sour cream, black beans, beef, tomatoes, taco sauce and cheese.
  4. Add another layer of tortillas and repeat step 3.
  5. Cover and bake at 350° for 20-30 minutes or until heated through and cheese is melted.
